Wafers At The Molasses
In these times of isolation at home, I have the impression that the children are turning into hobbits: they eat 2 breakfasts, 8 snacks a day ... To occupy and sustain them, we have prepared this week good molasses pancakes! It's a change in bear paws (and it's much better in the tummy and for the health).
3 t. flour (we put half and half white flour and wheat flour)
1 C. cinnamon tea, 1 tsp ground ginger, a pinch of salt
2 tsp soda tea (baking soda)
1/2 cup milk
2 1/2 tsp white vinegar
1/2 cup butter
1/2 cup brown sugar
1 t. molasses
Preheat the oven to 350 F. Mix together the flour, cinnamon, ginger, salt and soda in a bowl. Combine the milk and vinegar in a small bowl. Leave to stand for 5 minutes without stirring.
Beat the butter with the brown sugar with an electric mixer. Add the egg and molasses and mix.
With a wooden spoon, add half the flour and mix. Add the milk + vinegar mixture and mix. Add the rest of the flour and mix.
On a baking sheet lined with parchment paper, place balls of dough (we are using an ice cream scoop).
Bake for 12 to 20 minutes, depending on the size (we were very big and it took about 20 minutes). They should start to brown lightly, crack a bit on the top and be quite firm to the touch. A toothpick inserted in it should come out clean.
